Mushroom Gravy

Ah! A quick & easy with or without pasta favorite. Of course we love it over linguine or spaghetti, on another occasion I prefer it over rice.

Toppings are endless as well! Mozzarella & olives, peppers eggplant or as is.

One hour from prep to finish….

Mushrooms Wiped & sliced

Garlic Salt Pepper Parsley & Basil to taste

4 tbs Butter

Sauté on medium heat to tender

Add your favorite red tomato, I always have my gravy in freezer or you can easily add San Marzano tomatoes with seasoning. I’m known to add some seasoned bread crumbs for flavor (1/4 cup)

Adding wine is a desired palate choice.

Sauté 1/2 hour to 45 minutes as gravy thickens….

EVOO Califower n Garlic 

 

Blended with Fettuccine!

1/2 lb Pasta

1 sliced 1/2 inch Califower 

Garlic to taste 

Salt Pepper 

Fresh Parsley 

1/2 teaspoon basil

1/4 cup EVOO extra virgin olive oil

Rinse & shake off excess water of sliced Califower 

Place in large skillet & drizzle with oil 

Cover for 6 minutes 

Remove cover & quick fry to lightly browned edges adding garlic salt pepper & parsley 

Add Bail & salt to boiling water cook 9 minutes drain well 

Add to Skillet

Chicken Cacciatore 

 

This is a simple & delightful dish!

Cacciatore means wild, so I was told by Jr. Of Tripoli restaurant many years ago. Although prepared in a Marsala, 

The recipe works well with tomato for a lighter Sunday pasta dinner.

Ingredients 

Chicken breast quartered ( one breast per serving )

1 large onion peeled & sliced

3 peppers sliced

1 can crushed tomatoes 

1 small tomatoe paste

Vinegar of choice, 

Salt pepper basil garlic & parsley to taste

Olive oil 1/4 cup

Place chicken in pan with seasoning, bake 25 minutes *400 

Add vegetables mixed with oil continue baking 30 minutes *350

  

Add crushed tomatoe & paste cook for addition 30 minutes 

Serve with pasta or yellow rice

Peas N Pasta

Another light Summer dinner…..easily prepared. Saute garlic & onion (sliced) with olive oil; add fresh herbs of your choice…..parsley, red pepper or olives. Serve over hot pasta;with or without sauce. Every sauce works. Often a slice of bacon with onion..a good variation. Ummmmmmmm. Enjoy!
