Eggplant Parmigiana 

  A neighbor asked what do you do with eggplant? She gave me two…

Not being a fan or frequent dinner choice of mine, I stepped up to the chore ! Lol

2 large eggplant (peeled & thin slice)

3 eggs (well beaten / 1/4 c water)

1 1/2 cup seasoned bread crumb

1/2 cup bisquick 

1 lb ricotta cheese/1 egg

1/4 cup regianno grated

2 cups mozzarella 

2 cups Sunday Gravy /Tomato sauce

5 basil leaves

Place slices on paper towel stack with a heavy book on top to reduce water

  
Dip & bread eggplant slices in egg mixture then combined crumbs & bisquick 

Pan Fry to golden & place on paper towels to extract cooking oil

  
I am using a deep pie dish …

Arrange in dish starting with a small glaze of gravy on bottom then first layer of slices

Add cheese mixture …

  
Ricotta, 1 egg, grated cheese add salt & pepper to liking and fresh parsley 

Top each layer with mozzarella & a spoon of sauce, continue to finish slices… Last layer sprinkle a handful of mozzarella basil & dash of gravy

  

Bake in preheated oven *350 approximately 20 minutes 

My kids love them just fried for snacking or as a side !
