Amazing I never cared for soup as a child mostly when too many ‘things’ were floating around. This instance occurred with my children until I found simple recipes; minus the floating things . My Dad loved Beef with Barley and my children and grands love it as well. Again this is a basic and hearty soup great during the colder months of the year. I remember one winter day my granddaughter assisted me making this dish, funny how they always enjoy the meal after participating!
16 oz Barley
1 small onion
3 celery stems
3-4 garlic cloves
1 lb beef cubes
1/4 cup Wondra flour
3 tbsp butter (optional)
salt & pepper
28 ounces chicken stock
2 tsp browning seasoning
Prepare barley; rinse and soak according to directions, or you can use pealed barley which you boil and simmer 40 minutes.
Place beef cubes in a medium bowl, season with salt & pepper add olive oil and cover with flour. In a saucepan heated with oil add grated onion, celery and garlic saute lightly then add beef cubes stirring to sear. Add browning seasoning; I use a little butter as well (optional) brown beef til tender.You might like to add the carrots to the beef giving them a little sear and flavor. When barley is cooked add chicken stock, parsley and (carrots); simmer 10 minutes.
Combine Barley and Beef into one pot and continue to simmer 20-30 minutes. barley tends to soak up the broth so you may want to add more stock before serving.
Serve with a light tossed salad and enjoy!
