Roasted Tomato & Mozzarella

How Sweet It Is!

This is an old-time recipe for a fabulous appetizer, easily prepared and complimentary for any meal. Leftovers are great for sandwiches as well, there are many variations and choices. Breading the tomato or just seasoning and oil before placing in oven.

Needed

3 – 6 Plum tomato or on the vine

1 cup Seasoned Breadcrumbs

1/2 cup olive oil

1 lb fresh Mozzarella

Sliced Reggiano & Pecorino Cheese

Fresh Basil

Crushed Garlic

Pre-heat oven to 400*

Slice tomato and arrange on baking sheet which has been greased. I prefer to use olive oil, gently dip slices in a small bowl of olive oil and chopped basil seasoned with garlic and salt & pepper. Place in breadcrumb mix and single layer on baking sheet. 

Drizzle olive oil over he slices and place in oven til brown. Which may take 20 minutes; you may also try to broil them for a minute or two. Remove and set aside to cool on a platter.

In a medium bowl combine sliced mozzarella, cut and sliced cheese, olive oil and seasoning.

When the tomato has cooled add the cheese mixture over the tomato. You might enjoy a little Balsamic vinegar drizzled over the platter.

Scrumptous as a side, appetizer or with leftover as a sandwich topping!
