Sausage & Peppers

All Time Favorite!

Sausage and Peppers always brings me back to my childhood and New Years Eve. My parents would put up two huge trays along with a large pot of Keilbasi and the family came over to celebrate the new coming year. Although this dish is a specialty at the Jersey shore and enjoyed at many Italian festivals; I carry out the tradition of my youth on New Years’.  Sausage and peppers is also a fabulous selection for a gathering, say Monday Night Football. It is another simple recipe which once prepared; lingers well in the oven after cook time, ready for walk-in guests. I also change this recipe time to time adding fingerlings potatoes and sometimes cut up chicken breast; for children. The entwined flavor is delish.

3 – 5 lbs Italian sausage
5 – 7 lbs mixed color peppers(red,yellow,orange & green)
2 large yellow sweet onions
1 garlic bulb peeled
dash of red crushed pepper
fresh basil
salt & pepper to taste
1 tsp browning seasoning
1/2 cup stock
1 cup olive oil
pre-heat oven to 400*
      Cut sausage into 1  1/2 ” pieces and place in a large tin; cook  in heated oven turning continuously til pieces  brown evenly. This would take about 1/2 hour.  Cut & core peppers, slice into 1″ – 1/2″ slivers place in large bowl adding onions, seasoning and oil. When the sausage has shrunk to a cooked level add pepper mixture to sausage pan. Turn oven temperature down to 375*; I like to lay the peppers over the sausage for approximately 15 minutes; to soften and brown them.
Next turn the ingredients to mix well, the natural juice and oil is a good base should you choose to add the fingerlings potatoes and chicken breast. Cover the pan loosely for an additional 15 minutes.    You may enjoy adding a splash of wine as well.
