Although this is a quick in a pinch dish, those cold winter nights ahead will be comforted with a bowl of soup. Not to be confused with my basic Chicken Soup, this is merely a put together in 10 minutes; “Rescue me, I’m sneezing ” dish. Should you enjoy it as is; or add your own creativity to a favorite finish, I prefer this in comparison to opening a can or package. The ingredients used are probably already at hand!
Prep & cook time 30 minutes…..
2 – 4 cups chicken stock ( I normally have this on hand, if not I
use a store-bought carton)
1 handful baby sweet carrots
1 tbsp small onion section grated
1 tbsp olive oil
1 tbsp butter
salt & pepper to taste
3 sprigs parsley
1 pkge Tortellini
While preparing tortellini; add remaining ingredients to a saucepan and heat slowly. If I am using a store-bought stock, I sometimes add 2 tablespoons of base with a cup of water. Allow time for carrots to cook; when tender, add cooked tortellini.
This is a favorite of my grandchildren for an after school pick me up on a cold day. Much healthier than a fast food pickup!
