Definitely for salad lovers, this dish also has leftover potential. Taking a break from posting; hunger overwhelmed me. As I check out the leftovers I notice a small container with chopped salad. Immediately I’m steered to the sliced pork tenderloin and quickly grab a low fiber wrap. Didn’t take long to toast the wrap add cheese meat ….done. I’m back to share this recipe.
1/2 head Lettuce shredded or chopped
1 tomato skin cut (I don’t like seeds)
1 hard-boiled egg
1 tbsp. chopped red onion
1/4 cup shredded cheese
Cubed lunch meat is optional, bacon bits, celery, it’s your dish be creative! Ranch dressing preferred; we like 3/4 cup ranch dressing with a splash of rice vinegar, 3 tbsp. oil and my favorite a small squirt of old #7 mustard .
A sprinkle of Mrs Dash…nice finish!
I never dress this salad prior to serving,wet salad leftovers don’t hold up as well. Enjoy!
